- 2 ripe bananas
- 4 eggs
- 1/4 teaspoon of baking powder
Mash up the bananas in a large bowl. This is a fun jobs to get your kids to do!
Whisk eggs with a fork
Add eggs and banana together and add the baking powder.
Heat your skillet over medium heat and add a little coconut oil or butter.
Scoop a 1/4 cup (approx) of batter onto the skillet, when you see small bubbles around the edge it is time to flip the pancake.
Continue cooking on the second side for approx 1 min or until the pancake is golden brown.
Repeat with the remaining mixture.
Serve with raw honey, maple syrup or coconut sugar and fresh fruit.
Leftovers freeze well and make a good lunch box treat.
