Ingredients

  • 500g raspberries or blackberries, fresh of frozen
  • 2 teaspoons of local raw honey
  • Squeeze of lemon juice
  • 2 tablespoons of chia seeds

Method

  • Place berries, honey and lemon juice in a medium saucepan
  • Gently cook on a low to medium heat for 5-8 minutes, until the berries have broken down to form a compote.  Stir occasionally.
  • Add chia seeds and cook for a further 2 minutes.
  • Allow to cool slightly
  • Store in a clean jar in the fridge
