This family dinner is simple and economical. You can substitute any of the vegetables to whatever you have on hand. It works well with zucchini, sweet potatoe, parsnips, leek, onion and turnips.

If you don’t have fresh rosemary you can swap for any other fresh or dried herb. It works well with oregano too.

It takes approximatley 1 hour to cook but if you are in a hurry turn the oven up to 190 and it will be done in 40 mins, if you have more time, turn the oven down to 160 and it can bake for 1.15 mins. Either way it will be delicious.

Make extra for lunch the next day.

  • 8 chicken drumsticks
  • 1-2 red capsicums roughly chopped and seeds removed
  • 1-2 lemons chopped into quarters
  • 2-3 springs of rosemary
  • 2-3 potatoes roughly chopped
  • 3 tablespoon olive oil
  • 4-5 cloves of garlic (optional)
  • Salt and pepper

Add all of the ingredients to an oven-proof tray and bake in a moderate oven for 1 hour.
