Chocolate Bark

  • 200 grams of good quality dark chocolate – minimum 70% Cocoa solids – just melted microwave or stove top.
  • ¼ cup of raw almonds – roughly chopped
  • ¼ cup of raw walnuts – roughly chopped
  • ¼ cup of pepitas/pumpkin seeds – roughly chopped
  • ¼ cup of sunflower seeds – roughly chopped
  • 2 tablespoons of dried cranberries, goji berries or currants
  • Cover a baking tray with baking paper.
  • Tip the melted chocolate over the baking paper letting it form a natural shape.
  • Sprinkle the nuts, seeds and fruit over the chocolate and place it in the refrigerator to set.
  • Once set break into bite size pieces and store in the refrigerator.
