Green Pasta Bake Ingredients

  • 1 large head of broccoli cut into florets
  • 1 cup of frozen peas
  • 1 cup of baby spinach leaves
  • 1 cup of sliced button mushrooms
  • 1 packet of penne pasta, approx 500 grams.
  • 1/2 of a cup of plain yoghurt or sour cream
  • 1/2 of a cup of grated cheese or 1/4 cup of nutritional yeast
  • 1 tablespoon of extra virgin olive oil
  • Salt

Method

  • Cook pasta as per packet instructions or just under
  • Strain pasta keeping 2 tablespoons of the starchy water
  • Add pasta, water, vegetables, yoghurt, cheese, olive oil, salt to a baking dish
  • Combine well
  • Bake for 15-20 mins in a hot oven
  • Stir to combine before serving
  • Top with parmesan or nutritional yeast.
