Kale and Walnut Salad Ingredients

  • 1 bunch of kale, stems removed and roughly chopped
  • 3 tablespoons of walnuts roughly chopped
  • Juice and zest from 1 lemon
  • 2 tablespoons of extra virgin olive oil
  • Pinch of salt and pepper
  • 2 tablespoons of goats cheese
  • 2 tablespoons of toasted pumpkin seeds


  • Place chopped kale into a large mixing bowl
  • Add lemon juice, lemon zest  and oil
  • With your hands incorporate the dressing with the kale, gently macerating the kale
  • Top with walnuts, pumpkin seeds and a scattering of goats cheese just before serving.
