You can add whatever you like to these lettuce cups. I recommed putting all of the fillings into small bowls and letting the family help themselves. Yes it might get a little messy but it encourages exploration and fun. Make a conversation around the different foods and encourage everyone to try everything and make their own creation as colourful and delicious as possible.

Lettuce wraps

  • Iceberg Lettuce (leaves pulled apart)
  • Hummus
  • Sliced Turkey Breast, left over chicken or mince or tofu
  • Cheddar Cheese (sliced or grated)
  • Avocado (medium, sliced or mashed)
  • Fresh herbs
  • Pumpkin seeds or sesame seeds for crunch and texture
  • Grated carrot
  • Defrosted corn and/or peas
  • Sauerkraut or pickles
  • The possibilities are endless…..

Place large leaves of lettuce on a serving platter. Add your other ingredients to a large platter or small bowls.

This recipe provides a safe and fun way to introduce new foods to fussy eaters. Always use positive reinforcement with food and ignore unwanted behaviour. Most importunely have fun and don’t be afraid to get a little messy.
