Add these nuts and seeds to salads, soup and curries for a crunch of protein and fibre plus zinc.

Ingredients

  • Approx. 120 grams cashew nuts, roughly chopped
  • Approx. 60 grams of walnuts, roughly chopped
  • Approx. 60 grams of pumpkin seeds (pepitas)
  • Approx. 60 grams of sunflower seeds
  • Approx. 60 grams of sesame seeds
  • 1 teaspoon of turmeric
  • 1 tablespoon of olive oil

Method

  • Preheat oven to 150C
  • In a mixing bowl combine nuts, seeds, oil, and turmeric
  • Spread over a baking tray.
  • Bake in the oven for 10 minutes.
  • Allows to cool completely and store in a glass jar
  • Add to salads, veggies and soups to boost nutrition and flavour.
