Ripe Papaya Salad Ingredients

  • 1/2 a ripe but firm papaya or paw paw
  • 4 handfuls of rocket or baby spinach
  • Approx. 1 cup of mint roughly chopped
  • Approx. 1/2 a cup of coriander roughly chopped
  • 3 tablespoons of walnuts or pumpkin seeds
  • 2 tablespoons of extra virgin olive oil
  • 1 tablespoon of apple cider vinegar


  • Half the papaya, remove the seeds and skin and chop into approx 2 cm cubes
  • Add papaya, rocket, herbs and walnuts to a serving bowl
  • Just before serving top with olive oil and apple cider vinegar and gently toss until combined
