• 1 tablespoon of coconut or olive oil
  • 1 clove of garlic and 1 cm of fresh ginger grated (optional)
  • 1 large carrot grated
  • 1 zucchini grated
  • 2 stalks of celery roughly chopped
  • 600g chicken minced or diced or meat free alternative
  • 4 tbsp tamari and the juice of 2 limes (more if you like it zingy)
  • 3 tablespoons of sesame seeds
  • 20 cos or iceberg lettuce leaves

In a large frypan heat oil and add garlic and ginger.  Cook for 1 min then add the chicken.  When the chicken is cooked through add the carrot, zucchini, and celery and stir fry for 1-2 mins.  Turn off the heat and add tamari, lime juice and sesame seeds.  Stir to combine and serve spooned into lettuce leaf cups.  Top with fresh herbs.
