Spiralized Carrot Salad

  • 3 large carrots
  • Juice of half a lemon
  • 1-2 tablespoons of extra virgin olive oil
  • 1 tablespoon of sultanas
  • 1 tablespoon of pumpkin seeds, chopped or whole
  • 1-2 tablespoons of fresh herbs, basil or parsley chopped

Method

  • Spiralize or grate carrots
  • Add to a salad bowl with sultanas, herbs and pumpkin seeds
  • Just before serving add lemon juice and oil
