Zesty Bean Dip Ingredients

  • 420g can butter beans
  • 1/2 an avocado
  • 1/2 tsp finely grated lemon rind
  • 2 tbsp lemon juice
  • 2 tbsp extra virgin olive oil, plus extra to serve
  • 1 small garlic clove, crushed
  • 1-2 tbsp finely chopped fresh flat-leaf parsley, thyme or dill, plus extra to serve


  • Drain and rinse beans
  • Place beans, lemon rind, juice, oil, garlic and herbs in a food processor.
  • Blitz until smooth
  • Season with salt and pepper.
  • Transfer to a serving bowl and top with an extra drizzle of extra virgin olive oil and remaining herbs.
